This week’s meal plan is full of flavour-packed favourites and easy one-pot wonders! From the creamy dream that is the One Pot Chicken and Bacon Lasagne to the bold Sweet and Spicy Korean Fried Rice, every recipe brings something fun to the table. One Pot Creamy Chicken and Bacon Lasagne
The kids absolutely love any kind of lasagne but I don’t always have time (or the energy) to layer one up from scratch, so this is my lazy but lovely version that still tastes like you’ve made the effort. One pan, no oven, no faff… just creamy, cheesy comfort that everyone clears their plate for.

Sweet Chilli Chicken and Slaw Flatbread
This was one of those dinners I made when I fancied something quick but still a bit special, and it properly hit the spot. The chicken’s sticky and sweet, the flatbread gets all soft and toasty, and the homemade slaw just brings it all together. Fresh, crunchy, a little bit messy, and way better than a takeaway. It’s the kind of meal I’ll throw together when I want dinner to feel like a treat without loads of effort.

Sweet and Spicy Korean Fried Rice
So I threw this together one night with some leftover rice and a few bits from the fridge, and everyone loved it. It’s got that proper fakeaway flavour but made in one pan, in 15 minutes, and with way less sugar and salt than the real thing. Everyone was happy, there were no complaints at dinner, and I didn’t have to order a thing. Win-win.

Spicy Pesto Chicken Crunch Wrap
I’m fully in my crunch wrap era at the minute, they’re just so fun to make and even better to eat. This one’s packed with spicy pesto chicken, melty cheese and that crispy golden wrap finish that makes it feel like a proper fakeaway. It’s one of those meals that looks like you’ve made loads of effort, but it’s actually so simple. The kids loved it, I loved it… and I already know I’ll be making it again next week.
