Step 1
Heat a large frying pan or sauté pan over a medium heat and fry the chorizo for 4–5 minutes until golden and crispy. Remove half with a slotted spoon and set aside for later.
100 g Chorizo
Step 2
Add the beef mince to the pan and cook until browned, breaking it up as it cooks. Stir in the onion and peppers and cook for 6–8 minutes until softened. Add the garlic and tomato puree and cook for another minute before stirring in the smoked paprika, oregano and garlic granules.

Step 3
Crumble in the beef stock cube, pour in the passata and season with a little salt and black pepper. Stir well and leave to simmer gently while you cook the pasta according to the packet instructions.

Drain the pasta, reserving a splash of the cooking water if needed, then add it straight into the sauce and toss everything together until well coated.
Step 5
Scatter over the four cheese blend, top with the reserved crispy chorizo, pop a lid on for 2–3 minutes until the cheese has melted, then finish with a sprinkle of fresh parsley before serving.
