Creamy fajita chicken one pot ricešŸ—

This Creamy Fajita Chicken One Pot Rice is a delicious, fuss-free meal packed with bold flavours. Tender chicken, vibrant fajita spices, and creamy rice all come together in one pot for a comforting, flavourful dish that's perfect for busy weeknights. Easy, hearty, and full of flavour—this one’s sure to be a hit!

Turn cooking mode on

Step 1

Fry off your chorizo in the pan until crisp then remove and put to the side.

Step 2

Add your seasoned chicken into the same pan, and cook for around 5-10 minutes or until cooked through. Take the chicken out of the pan and pop to the side.

Step 3

Add your onions and peppers into the same pan and cook until they’re soft, then add the garlic and tomato puree.

Step 4

Cook for a few minutes and then add in the stock and cream. Reduce that down a little and then add in the cooked rice.

Step 5

Once the rice is all mixed in add in the chicken and chorizo.

Step 6

Once it’s mixed together sprinkle on the cheese and pop it under the grill until bubbling and golden. Garnish with chilli flakes and parsley.

Step 7

Serve and enjoy.
