7 Dinners for when you can’t be bothered to cook
A little round up of my favourite meals to cook when I can’t be bothered but still want something cosy and delicious!
Honey Buffalo Ranch Rice
This one is loud, saucy and very hard to stop eating. Sticky honey buffalo chicken, fluffy rice that soaks up all that glossy sauce, and a cool ranch drizzle over the top to calm things down just enough. It’s quick, cosy and proper fakeaway energy.

Chicken and Bacon Kiev Flatbreads
If you love anything chicken Kiev–style, these flatbreads are such an easy win. Creamy garlic & herb chicken mixed with crispy bacon, spring onions and a warm garlic butter drizzle… all wrapped up in a soft flatbread. It’s simple, cosy and one of those quick throw together meals everyone always loves.

Salt and pepper chicken and chips
If you love a Chinese takeaway night but want something quick and easy at home, this Salt & Chilli Chicken & Chips is such a good one. Crispy chicken, crunchy peppers, loads of flavour and everything tossed together in the pan at the end, it’s the kind of dinner that disappears fast in our house. Perfect for a cosy Friday night.

Sticky Korean Burger with a Pickled Slaw
This one is proper fakeaway comfort but made lighter and totally doable at home. Crispy air-fried chicken, coated in a sticky Korean gochujang glaze, finished with a creamy gochujang mayo and a sharp, crunchy pickled slaw to balance it all out.

5 ingredient Chicken Fajita Quesadillas
These are one of those dinners (or lunches) that feel like a treat but are made with hardly anything at all. Spiced chicken and peppers, loads of melty cheese and crispy wraps, simple, comforting and perfect for busy days when you want something easy that everyone will eat.

Teriyaki Beef Rice Bowl
This sticky teriyaki beef rice bowl is one of my favourite quick lunches, filling, comforting, and easy to throw together without much thought. Perfect for those midday breaks when you want something warm and satisfying but don’t want to spend ages in the kitchen.

Creamy Bacon Ranch Pasta
This one started as “I’ll just use up that pack of bacon”… and somehow turned into a pasta I couldn’t stop picking at straight from the pan. Crispy bacon, a herby, creamy ranch-style sauce and pasta that gets properly coated in all of it, simple, cosy, and very delicious.
