Notes

  • Swap the meatballs for diced chicken breast or chicken thigh, making sure it is completely cooked through before serving.
  • Use reduced-fat coconut milk for a lighter sauce, although it won’t be quite as rich and creamy.
  • Use whichever curry paste your family prefers. Korma or mild curry paste will keep it gentle, while tikka or madras will add more heat.
  • Vegetable stock can be used in place of chicken stock.
  • Swap the homemade naan for shop-bought naan or poppadoms if you’re short on time.
  • Use plant-based meatballs, vegetable stock and dairy-free yoghurt and butter for a meat-free, dairy-free alternative.
