Boxing Day Mac n Cheese

This recipe is a post-Christmas dream. It’s all about taking whatever’s left on the cheese board, I used Boursin, Extra Mature Cheddar, Brie, and Red Leicester, but honestly, anything goes! Then, raid the fridge for those festive leftovers, sprouts, pigs in blankets, ham, turkey, stuffing, whatever you’ve got. Stir it all into a creamy, cheesy mac and cheese, and you’ve got the ultimate comfort food to fuel those Boxing Day sofa sessions. Easy, adaptable, and so delicious!

Ingredients

Method

Turn cooking mode on

Step 1

Add in the dry uncooked pasta to a saucepan, add in 500ml of the stock and cook on high until it’s absorbed and the pasta is cooked al dente, adding more stock if needed.

300 g Pasta

800 ml Chicken stock

Step 2

Then add in the milk and turn the heat down. Cook for a few minutes until it has thickened slightly and add in the cheeses leaving the mozzarella out until the end.

300 ml Milk

120 g Cheese

Step 3

Stir until melted and you have a nice creamy sauce and then season to taste.

Salt

Pepper

Step 4

Add in all the leftover bits and mix through, then top with the mozzarella and pop into the oven or grill until golden and bubbling.

80 g Mozzarella

Step 5

I topped mine with some more pigs in blankets and some stuffing.

Step 6

Garnish with some parsley. Serve and enjoy!
