This is one of those dinners that feels like a proper treat but takes hardly any time at all. It’s quick, packed with flavour and perfect for when you want something a bit different without loads of effort. Crispy on the outside, creamy buffalo chicken in the middle, fresh crunch from the salad and that extra hit from the Doritos… honestly so good.

Garlic Parm steak flatbreads
I had steak in the fridge and didn’t want to just do the usual with it, so this is what I ended up making instead and it’s honestly so good. Crispy garlic butter flatbreads, juicy steak, loads of parmesan and a bit of rocket to freshen it up… simple but so satisfying.

Chicken and Sweetcorn Melt Sliders
I had some cooked chicken to use up and didn’t want to just do the usual with it, so this is what I ended up making, and it’s honestly so good. Soft, buttery sliders filled with creamy chicken and sweetcorn, topped with melted cheese and finished with garlic parsley butter… simple but so satisfying.

I wanted something really simple but full of flavour, and this is what I ended up making, and it’s one of those dinners that just works every time. Sweet, jammy onions, golden sausage and fluffy rice all cooked together in one pan, finished with melted cheddar… proper comforting and ready in 15 minutes.
