Slow Cooker Week
This little slow cooker collection is basically my love letter to low-effort, big-comfort dinners. From creamy pasta and pillowy gnocchi to fragrant coconut rice, smoky chorizo stew and cosy pork stroganoff, these are the kind of meals you throw on, walk away from, and come back to something that feels like a proper hug in a bowl. Perfect for busy days, slow evenings and those nights when you just want dinner to look after you.
Slow Cooked Meatball Gnocchi
This is one of those “chuck it all in, walk away, come back to something unreal” kind of dinners. Soft, saucy meatballs, pillowy gnocchi and a creamy, cheesy tomato sauce that basically begs for a big bowl and a fork straight from the pan. Minimal effort, maximum comfort. It’s rich, cosy and very much a “just one more bite” situation… every single time

Slow Cooked Pork Stroganoff
This is one of those dinners that feels like a big, warm hug in a bowl. Tender pork, a smoky, tangy sauce and that creamy, stroganoff goodness that basically demands something fluffy to soak it all up. It’s rich, comforting and perfect for those “I just want something cosy tonight” kind of evenings

Slow Cooked Chicken and Chorizo Spanish Style Stew
This one feels like a little holiday in a bowl. Smoky chorizo, tender chicken, soft baby potatoes and a rich, paprika-spiced sauce that basically begs for a big spoon and some serious dipping. Low effort, big flavour, and the kitchen smells unreal while it’s bubbling away. It’s warm, cosy and just the right mix of hearty and comforting… especially with that garlicky aioli dolloped on top

Slow Cooker Coconut Chicken Curried Rice
This one’s for when you want something cosy, comforting and a little bit special without standing at the hob all night. Tender chicken in a creamy coconut sauce, warm spices in the air, fluffy basmati folded through at the end and then all the fun toppings on top, minted yoghurt, mango chutney and a generous sprinkle of coriander. It’s one of those big-bowl, slow-evening dinners that just makes everything feel a bit calmer.

Slow Cooked Chicken, Bacon, Red Pepper Pasta
This is one of those “throw it all in and let dinner do its thing” kind of meals. Tender chicken, smoky bacon and that rich, sweet roasted red pepper sauce wrapped around creamy pasta just feels like a proper hug in a bowl. It’s low effort, high comfort, and basically made for big bowls, extra parmesan and zero plans for the evening
